Oakville’s The Einkorn Shoppe Announces Small Ag Collab Space in Partnership with OMAFA

Oakville, ON – October 9, 2025 - The Einkorn Shoppe by Food Haven, is establishing a distinctive identity in Ontario's culinary scene through its Farm-to-City Market Collab Space and

innovative ancient grain research.


“Our government is proud to support The Einkorn Shoppe by Food Haven in its mission to bring ancient grains back to our tables and strengthen Ontario’s local food system,” said Trevor Jones, Minister of Agriculture, Food and Agribusiness. “By investing in their Farm-to-City Market Collab Space, we are helping connect families with local farmers and food producers in a modern marketplace, while also supporting new research that will drive agricultural innovation across the province.”


Under the leadership of Gibbs Petit-Frère, the organization is dedicated to revitalizing ancient grains and collaborating closely with farmers to integrate in-house bread testing with advanced laboratory analyses. The goal of this research is to make ancient grains more accessible to the baking sector while promoting favourable outcomes for local Einkorn growers.


With extensive experience working alongside small-scale Einkorn farmers, the organization is developing a local marketplace that will unite various small-scale agricultural producers from Ontario. Its Farm-to-City Market Collab Space, designed as a cooperative retail model, seeks to highlight and sell products such as preserves, maple syrup, cheese, and more, giving farmers a unique chance to present their offerings directly in a bustling urban shopping environment.


With support from the Ontario Ministry of Agriculture, Food and Agribusiness (OMAFA), The Einkorn Shoppe is making crucial investments to assist small agricultural farmers and food

producers. This initiative aims to reinvent the concepts of ancient grains like and retail in Ontario thereby bolstering local agriculture by closing the gap between rural and urban Ontario.
